Has a nice strong tang and sweet milky flavor. Depending on my levain build, the resulting bread can be anywhere from mildly to intensely sour.

I feed twice daily. Current RT is 24C.
When I leave it in the fridge, I feed it weekly.
Remove all but a Tablespoon. Add 50g each flour and 100g water filtered from my Berkey filter.

Currently Laforge is a 1:1 All purpose : Rye flour at 100% hydration. It easily triples or more when fed.
