A delightful woman named Rose Lawrence of Red Bread in Los Angeles was sharing her starter in the Santa Monica Farmers Market (in dried form, light golden wafers). I was intrigued by the idea and her generous spirit sold me. I have always loved baking and this was a natural next stage for me.

For the first two years, my starter was sweet and smelled of grapes. Now, in its third year, it smells and tastes slightly sour, not unpleasantly so. It's just had a bath and more happily bubbles with small even bubbles.

I feed Tony in the morning and evening to coincide with my waking and sleeping times. Tony lives in a small bowl covered with a saucer. He sits on my kitchen counter unless I will be away or the weather is too warm, at which point a feed him well and refrigerate.

I combine these three things by eye or by weight, stirring vigorously, after removing all but 20 g of existing starter.
