Plain curiosity - I'm a medical microbiologist, growing beasties at home seemed a fun thing to try and do. Also - being German, I luuurve bread, but find British supermarket breads very underwhelming.
Characteristics
JS is still avery young starter - he's just had his first few days without a feed in the fridge. Currently there is not yet a pronouced sourdough flavour to my breads.

Starting ingredients
- 100% Whole meal rye flour
- 100% Water
- 5ml Red wine
- 100% White bread flour
- 100% Water
- 100% White bread flour
- 100% Water
Feeding ingredients

Working method

Day 1 - mix ingredients and keep in a jar at room temperature.
100% Whole meal rye flour

5ml Red wine

Feed once a day for 4 days, discarding half of the starter before each feed.

From day 4 onwards, feed twice a day until starter smells pleasantly yeasty and rises reliably.
It took my starter about 10 days or so to get going.
