Characteristics
I got my starter from Kensington breads in Canada (online) as a dehydrated pack . Started it with regular old all purpose flour and distilled water. It says it’s from some starter 150 years old from the San Francisco area. Seems to be doing well five weeks now.

Started 5 weeks ago. Use my starter and add around 100 grams of flour (rye, wheat or bread flour to it) and 75-100 grams of water
