Characteristics
It has a mix of sweet and sour smell. It does not have a slightly acidic note, but its main taste is sweet with a bit dairy aftertaste. It is strong enough to keep long fermentation (panettone). The texture is porous with small uniform bubbles at the beginning of the rising process and then bigger inhomogeneous bubbles.

I weight the total sourdough mass.
Then I keep the amount ( X) that I want to refresh.
Then I add X amount of flour.

Working method

I used white wheat flour of low or medium strength into the sourdough.
