Same as how it started, 50% flour, 50% water. I leave it out for the day to grow and then goes back in the fridge.

작업방식

The flour is sourced from the local mill. The mother was started on the kitchen bench. Made a first batch and left it for 3 days. The lit is not sealing it completely. After 3 days first feeding time, repeated this over the course of 2 weeks.
