I lose my former starter Tahmineh and I will replace it with a new one that named Doughst . Doost in Persian means friend and this is a fun name including dough and friend, anyway, she is a regular starter with about 100% hydration. She is young and unexperienced, we will help ourselves to grow and bake future great again.

  • 85g Filtered tap water

  • 50g Starter
  • 50g Filtered tap w

Mix the culture with water with room temperature.

I add bread flour and stir it until just mixed.

I use The strongest (regular) bread flour available in iran, by KFF mills - a touch of whole wheat flour

Set the temperature of water about 35 degree C
85g Filtered tap water
