Caratteristiche
My starter is not as active as others as it does not double as readily as others do. It works well as a ferment for my breads though. My bread which is normal 1/3 wholemeal 2/3 white flour has crisp crust a quite close crumb with small holes. The crumb is slightly sour but not overly so. I tend to do a same day bake.
