I was doing it back in Argentina as you couldn't get sourdough there before and now I continue this... I just need my sourdough and say good morning to Betsy every day and feed her.

When I bake I get this magic, movie like, golden crispy, crunchy, crackling crust and this soft full of wholes slightly chewy crumb, the aromas are well into nuts, walnut, almond and a hint of hazelnut, the sour side is mild even after 24hs or more of refrigeration...
