Characteristics
It smells delicious, and have a strong sour taste, nutty. It's really simple, nothing fancy I guess. But is the simplicity of it that makes it so versatile.

Working method

I start with a spoon of white 000 flour, and a spoon of water. I make a cute ball. And then I repeat three days in a row. When is big enough not to be a cute ball, I put 30 grams of 000 flour and 10 of Wholegrain.
Then repeat the ratio for 4 days or so. Then I have around 300 grams of sourdough. Enough to make a beautifull bread, and keep 50 grams of starter.
Some of them have six months.
