Pjf honey sourdough
Since 2020
wanted to try to make a mild tasting starter. Also believe that sourdough with long fermentation is more nutritious than yeasted breads.
Characteristics
starter with a local raw dark honey and Spelt flour which I grind myself. The starter is very active. Mild taste. Bread is 50/50 Red Fife and white bread flour. Bake in clay bakers. Get good oven spring.

add 3/4 cup of purified water

stir well with plastic spoon

place back in fridge

bread
mild tasting bread. Close crumb. Moist. Chewy crust.
waffles
use excess starter to make waffles. Just use straight starter.
