We adore sourdough bread so we wanted to try to bake it. And it turned out to be a nice meditative process.

  • 49% Organic wholegrain rye flour
  • 49% Clear water
  • 2% Apple kvass
  • 20% Starter
  • 40% Water
  • 40% Organic wholegrain rye flour

먹이재료

  • 40% Organic wholegrain rye flour
  • 40% Clear water
  • 20% Starter

Innokenty prefers clear water and organic flour.
40% Organic wholegrain rye flour 40% Clear water 20% Starter

작업방식

Mix flour, water, and a bit of 3-day apple kvass.
49% Organic wholegrain rye flour 49% Clear water 2% Apple kvass

Leave it for 24 hours. Then discharge about half of the sourdough and refeed it with a mix of 50% of water and 50% of flour.
20% Starter 40% Water 40% Organic wholegrain rye flour

Repeat step#2 6-7 times.
