Fell in love with the bread when visiting a cafe in San Fran. I had to make it. My starter is from a friend when I was living in Reno, it came from her families rural cafe in France. About 260 years old. It was a honor to have some of my friends starter 39 years ago. She's been so active and good to me in all those years. I can't imagine not having her. I do have some dried just in case.

특징

She's so happy! Usually very active after 2 feeding when I've been out of town for a few weeks. She makes semi-sour breads. If I'm using 100% hydration. When I'm doing 90% hydration much sweeter then before. Much happier now that I've been feeding her 10-15% whole wheat, I like milling my own. Plus is so fresh. I've been doing it for a few years now. Give it a try. Elizabeth is very easy to care.

Fed 90% organic bread flour, 10% fresh milled organic turkey wheat. Kept at 100% hydration (90% of the time). In the summer (it's very hot here) lives in the fridge ad fed every 8-10 days. Winter she's on the counter, fed about every 5 days, or when I'm getting low. She's very easy going! I've started feeding her 10% whole wheat flour, she's been much happier. We like a happy starter!

작업방식

I use organic bread flour 90%, organic turkey wheat 10%, water is spring. I keep Elizabeth 100% hydration. She is mild in flavor. Can raise a loaf of bread in no time at room temperature. Of course if it's not real cold. She's quite easy going for a starter! She been to 8 different states with me. She does come with me on vacations. Don't we all take our starters? I do, on some vacations.
