Lucy is two now and to me it is pretty stable and strong , I have made lots of bread since she is been mature and also I made her sister Lura which made of Lucy with 50% hydration . Both are strong and stable,
Lucy has been feed with 100% hydration and 50% rye flour + 50% bread flour (12% protein)
she has been feed at least once a week and some time more than 3 times a week .
