I started with home fermenting vegetables to be healthier, and came across the sourdough group on Facebook. I was quite inspired!

Horatio is quickly active, doubling in size in a fairly short time. He works well with a one day fermentation.

I discard just over half of the starter, add equal amounts of the unbleached flour and filtered water. Stir thoroughly and cover lightly with saran wrap.

I started with equal amount of the flour and water. Each morning I discard a little more than 1/2 of the starter and add 60 grams each of the flour and filtered water.
