Caratteristiche
Long stabilitybetween refreshment (~3 Mo) very active growth 2 feedings (12hrs apart) have it at full power. It’s 100% biodynamic organic whole grain rye. It has the classic mellow rye flavour and is good for any levening task. Pumpernickel pan bread to country bread batards. My favour bread is 70% white bread flour with 20% Red Fife. I prefer high hydration for the levain and the dough.
