It's very mild (not very sour) and rises extremely well at room temperature. It smells like a sweet summer wine.

I take it out of the fridge and let it come to room temperature, around 3-4 hrs.
Then I take 1 tsp of starter and feed 100 g of organic whole meal rye flour and 100 g of water.
After 12 hours, I repeat this step.
