Very active if fed regularly, but can sulk if left into the fridge for too long. Smells of fermented apples after a spell in the fridge & sweet / cereal / yogurt when well fed.

- 140% Starter
- 70g Water
- 50g Dark rye

Remove old starter from Weck jar, until total weight is 350g.

Add 70g of water to jar. (Filtered water with <6 TDS @ 36°c).
Mix well.

Add 50g dark rye. Mix well. Wipe down inside of jar with spatula & place on lid (no seal, unless going into fridge).

Place in airing cupboard @ 28°c for 3 -4 hours or kitchen at 20°c for 6 hours.
