Couldn't buy good bread, some friends were baking already with sourdough. One of them posted a photo of his bread on facebook, and I saw that it was shared in the Perfect sourdough group. So I joined the group, and the next day started doing my own starter.

Caractéristiques

Started with a little splash of fresh lemon juice in the first 4 days, some flavors of the fruit are still in there. Was born in 2016 May as my first attempt on sourdough baking. The first two month period was awful, got some old flour, using tapwater it's a miracle Cecilia didn't die. Then I got wiser, and she is really strong now.

  • 30g Whole Rye Flour
  • 60g Starter
  • 30g White bread flour
  • 60g Mineral water

Every night I remove the two thirds of my starter with a fork, then I measure the ingredients on top. I stir it around 20 times with the fork, then put it back on it's shelf next to the water heater in the bathroom.
