Sometimes quietly active and other times over the top of the crock. I was gifted her from a woman from Bethel, Alaska. She is from a very old lineage that came across the Chilcoot Pass, during the Gold Rush. I have shared her with many people that have carried her far and wide. She is sensitive to weather change, and I have to pay attention closely with pressure change

I use either Central Milling unbleached organic flour, or Bob's Red Mill organic unbleached flour
50% 100 gms unbleached flour

I feed BH White every 1-2 days, she lives on my kitchen counter. she is fed sometimes precisely and sometimes not.
i use unbleached organic flour from Central Milling Company.
I use water from my Son's well, it is delicious clear water.

Result
every day loaves of bread, pancakes, babkas
I love flaxseed heaven and Skillet loaf from Teresa Greenway, the Babka and cranberry/semolina loaf from Sara Owens.

Sourdough leavens have allowed my husband to consume bread with having heartburn afterwards. This is an outstanding attribute in my opinion
