Adam is mildly sour and when baked the bread doesn't have the overpowering sourness which I like. There is a slight after taste which is very pleasant. He is currently dormant in the refrigerator.

I only feed during lavaine stage. This process worked well for a month and then Adam was not willing to cooperate with volume doubling process. :-(

Adam (100 g organic whole wheat, 100 g of distilled water) was born on February 4, 2017. He went through much turmoil because I refused to toss out half for subsequent feedings. Overpopulation must have been the problem.

In a desperate attempt to revive sluggish Adam, I added a table spoon of organic non-fat yogurt 3 weeks after he was born. Since then he has been a new boy, vigorous and active!!

I baked my first boule with Adam not passing the float test. The result was not good... dense!!!

I have made 5 so far and they all had something going wrong in different stages.
