My middle son was telling me about the starter he was creating as something to do during the pandemic since he was not working. I work in healthcare, so that wasn't my situation, but I decided to join in the fun and it has been a real bonding activity- long distance, because he is in Pennsylvania, 2,300 miles away.

I used the King Arthur Flour sourdough starter instructions, using their unbleached all purpose white flour (because I couldn't get rye) and water treated by our reverse osmosis system.
