Ione's sourdough waffles
Ione Christensen is a true sourdough. Born in Dawson City, first female mayor of Whitehorse and former Senator of Yukon. When I visited her she shared her recipe to make waffles. These waffles are based on her sourdough that is dating back to 1896, when her great grandfather was looking for gold during the Klondike Gold Rush.
Once back in Belgium I tried to make them when I was refreshing her sourdough in the sourdough library.
Ingredients
Here's what you need:
- 500 g of liquid mature starter (add a tablespoon of sugar according to your taste)
- 3 eggs
- 100 g oil (peanut or canola)
- 5 g baking soda
- 5 g salt
How to proceed?
Ione always adds the salt first to the starter, that way she does not forget it.
Then she beats the eggs and adds them to the starter followed by the oil and finally the baking soda.
She makes sure that her waffle iron is hot by the time the batter is ready. Once the baking soda is added you can start baking.
If your batter is too stiff you can still add a little bit of water. Next time you can use more water in your starter when you are making these waffles.
Bake the waffles golden brown, they should be light and crispy. DELICIOUS
How to eat?
You can serve them with icing sugar, whipped cream, maple sirup, blueberry jam, sausages, bacon or whatever you want. Sweet and salty, they are made to please whomever is in for a treat.
