Aran my rye loves Dubai fermentation temperatures resulting in a consistent, fruity elegant flavour with a close yet not heavy crumb. Beatrice my white rises and falls quickly due to the warm fermentation temperature. She is slightly fickle - one needs to attend to her once ready - she is like the little girl with the curl in the middle of her forehead - good when she's very very good ❤️
